Pasta from ‘The Bear’ (Spaghetti Pomodoro)

This pasta from Bear is incredibly simple in its ingredients, but its flavor profile is deeply complex. The food is definitely the center and front, so when the high-end chef comes home to take over his brother’s sandwich shop, it’s definitely a show about a chef you should binge on Hulu, just like the rest of the internet.

This dish, pasta, actually has a version of spaghetti (pomodoro fettucine or pomodoro), which is a tomato sauce that has been finely diced. It’s a classic and it has been around forever in various forms. The internet is raving about it and this pasta dish plays a major role in the plot of the episodes, with one of the characters being particularly obsessed with it. (No spoilers)

The pasta from ‘The Bear’ (spaghetti pomodoro) highlights tomato as the main flavor. Basil., hot pepper flakes, and garlic all play a supporting role, but tomato is the star of the show.

    While I was researching this recipe, I tested a couple of different versions of this sauce. I can tell you his tip is to make sure you blend the oil, basil, garlic, and hot pepper flakes instead of straining them out. I also checked out Buzzfeed’s version of this sauce by Ross Yoder. Don’t give them too much credit for the show, as they don’t offer much guidance.

    This edition is my personal interpretation, but it was undoubtedly influenced by the two formulas mentioned earlier!

    Ingredients..

    The list of ingredients is the most appealing aspect of this dish. It’s incredibly straightforward.

  • Spaghetti.
  • Olive oil.
  • Garlic.
  • Basil.
  • Spicy chili flakes.
  • Butter.
  • Onion.
  • San Marzano tomatoes.
  • Parmesan & additional basil for decoration.

    Let’s go through my rendition of this pasta gradually.

    Firstly, we are going to create the oil.

    In my perspective, truly stuff it in there, recently picked basil and spicy pepper flakes, incorporate the garlic promptly. On medium-low temperature, include your oil to a compact saucepan.

    As you prepare the sauce base, allow all those flavors to blend harmoniously and take it off the heat. The aroma of garlic is noticeable and the basil is beginning to soften, cooking for about 45 seconds to 2 minutes.

    Heat the oil, garlic, basil and chili flakes over medium low heat.
  • Wilted basil in a pot of oil with garlic.
    Cook for about 45 seconds – 2 minutes, until the basil is just starting to wilt.
  • Place the butter in the pan with the skin side facing downwards. Include your onion, which should be halved and have its skin removed once it has melted. Heat a portion of butter on medium heat in a Dutch oven.

    Let it simmer like that for 3-4 minutes. Monitor the butter carefully, as you don’t want it to burn.

    Place the onions cut side down in the butter. Cook for 3-4 minutes.
  • The onion should just be starting to brown – now’s the time to add your San Marzano tomatoes.. Roughly crush them with a potato masher if you got whole ones.

    Sprinkle a bit of salt according to your preference, cover the dish, and reduce the heat to a medium-low setting.

    Allow it to simmer for 20 minutes.

    Meanwhile, place your cool(ish) oil in a food processor and finely chop it.

    Add the oil to a food processor, and chop it up.

    At this stage, you should commence preparing your spaghetti also, in boiling water that has been seasoned with salt.

    Continue cooking for an additional 5 minutes. Incorporate the combined oil into the tomatoes. To preserve its delightful taste, it is important not to fully cook the basil. The crucial aspect is to maintain its freshness.

    Add the oil to the tomatoes. Remove the onion. Cook for five more minutes.

    Take out the onions. Include your spaghetti (it should be slightly undercooked, you can complete the cooking process in the sauce!).

    Cook for another minute, then serve with fresh parmesan cheese and more basil (and maybe a crack of black pepper as well).
